Banana Bread

  • 1 ¾ cups unbleached flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ⅓ cup canola oil
  • ⅔ cup sugar
  • 2 eggs
  • 2-3 mashed, ripe bananas
  • ½ teaspoon cinnamon
  • pinch of grated nutmeg
  • ½ – 1 cup semi-sweet chocolate chips

Preheat oven to 350 degrees. Sift together the flour, baking powder, baking soda & salt.

Cream the oil and sugar together until light and fluffy. Add the eggs and beat well. Add the flour mixture alternately with the bananas, a small amount at a time, beating after each addition until smooth. Add cinnamon & nutmeg.

Prepare a 8 ½ x 4 ½ x 3 inch loaf pan and bake about 1 hour and 10 minutes. If using a mini loaf pan yielding 6 mini loaves, bake approximately 20-30 minutes. Toothpick in center of bread should come out clean when ready.

Fruit Smoothie

  • 1-2 cups of mixed fresh berries
  • 8 ounces orange juice or milk
  • 8 oz. LF yogurt, vanilla or berry flavor
  • 1 banana
  • 1 cup ice

Cut up fruit and add all ingredients to blender. Blend until smooth.

Yields 2-3 6 ounce servings

Federal House Waffles

  • ¾ cup all purpose flour
  • ¼ cup cornstarch
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1-cup whole milk
  • 1/3 cup canola oil
  • 1 egg
  • 1 ½ teaspoons sugar
  • ¾ teaspoon vanilla

Combine flour, cornstarch, baking powder, baking soda and salt. Mix ingredients well.

Add milk, oil, egg, sugar and vanilla. Mix well. Let the batter rest for about 30 minutes.

Preheat waffle iron. No need for seasoning the waffle iron. Cook according to directions on waffle iron. Serve with fruit and nuts. I like strawberries and pecans.

Provide maple syrup, confectioners sugar and melted butter.

Yields four individual waffles, approximately two per serving.
